Beets are typically prepared with sweet and sour flavors. In this recipe, roasting brings out the sweetness and a balsamic glaze adds the piquant notes. Experiment with seasoning to make it your own. Adding carrots to the mix also adds color. Peel beets while fresh, or you can bake for 30-40 minutes in foil to make the skin come off easy.
Ingredients
4 beets, peeled and cut into cubes
3 small red onions, each cut into 8 wedges
2 tablespoons olive oil
1½ teaspoons dried thyme leaves
1½ teaspoons rosemary
1 pinch sea salt, or to taste
1 teaspoon pepper, or to taste
2 tablespoons balsamic vinegar
Instructions
Preheat oven to 425 degrees F (220 degrees C).
Line a baking sheet with foil or parchment paper.
Combine beets, onions, olive oil, and seasoning in a bowl until beets are coated, and arrange on baking sheet so that they don't touch.
Sprinkle beets with salt and pepper.
Roast 35 to 45 minutes or until onions are tender.
Drizzle balsamic vinegar over vegetables.
Roast 5 minutes longer or until vinegar is the consistency of syrup.
