Keto Chocolate Chip Cookies

Easy to bake, keto diet friendly, keto cookies. Substitutions include adding nuts, or remove nuts without adjusting other ingredients Adjust the stevia sweetener to taste, and as directed by the specific product. Chocolate chips can be sugar free or use your own preferred brand.
Ingredients
  • 1½ Cups Almond Flour
  • ½ Cup Salted Butter
  • ¾ Cup Stevia Sweetener
  • 1 tsp Vanilla Extract
  • 1 Large Egg
  • ½ tsp baking powder
  • ½ tsp Salt
  • ½ tsp xanthan gum
  • ¾ Cup Chocolate Chips (natural or sugar free)
  • ½ Cup Chopped Walnuts
Instructions
  1. Preheat your oven to 350 F.
  2. Melt the butter in microwave or over stove.
  3. Place the butter into a mixing bowl and beat with sweetener.
  4. Add the vanilla and egg and mix.
  5. Add the almond flour, xanthan gum, baking powder, and salt. Mix until well combined.
  6. Combine the chocolate chips and nuts into the dough with your hands.
  7. Roll the dough to Make 12 balls and place on a baking tray.
  8. Bake each for 10 mins.
  9. Let cool and serve (or eat them hot...I love them hot)
